2015 Sebastiani Old Vine Cabernet Sauvignon, Sonoma County
Our 2015 Old Vine Cabernet Sauvignon boasts concentrated flavors and impeccable structure. It’s a deep ruby color with stunning aromas of black currants and dark cherry fruits, and touches of tobacco leaf and espresso. Flavors of cherry, plum and wild berry intermingle seamlessly with graphite and bergamot tea. The palate’s moderate acidity complements soft, supple tannins on the lingering finish. - David Nakaji, Winemaker
84% Cabernet Sauvignon, 10% Merlot, 6% Malbec
September 18th to October 10th, 2015
14 months in French oak (17% new)
The fruit was cold-soaked after harvest to build richness and flavor. All of the grapes were fermented warm and had little press wine added back to avoid any green, astringent flavors. All lots were racked off the lees and put into French oak barrels (17% new) for 14 months of aging. A careful assemblage was carried out the following spring to seamlessly marry the two lots with 10% Merlot and 6% Malbec to add a nice balance. The wine was bottled in August 2016.
2015 was a fantastic vintage producing high quality fruit. It began with an earlier than average bud break and an intense, compacted harvest beginning earlier than average as well. The high temperatures in August and early September accelerated maturity and picking times. The grapes were harvested under clear night skies from September 18th to October 10th, 2015 at optimum ripeness.
